Easy Chicken Teriyaki Stir Fry

 What did we get when we had a Summer Time Party for sixteen to twenty-one year old’s?  Easy Chicken Teriyaki STIR FRY!

How does that happen?

In the process of planning this party we (Ok, maybe just me) had the “bright” idea to serve a veggie tray. People love that, right?  In fact, just a couple of weeks before we had several families from church over for pizza before Bible study.  In order to make it a “full” meal I added a veggie tray and dessert.  Almost ALL the veggies were gone!

So, we planned, bought and prepared the food for the Summer Party, including a veggie tray.  It was a lovely veggie tray…nice crystal platter, colorful veggies, (carrots, broccoli, celery, and sugar snap peas) and of course some yummy ranch dip.  Well evidently, that age group prefers CANDY to VEGETABLES!

 At the End of the Evening We STILL Had a Lovely Veggie Tray!

I had to do SOMETHING with all those lovely veggies.  So, I did….. STIR FRY!

Here’s the Recipe:

Serves 5-6

Broccoli – 1 large stalk

Sugar Snap Peas – 1 bag

Baby Carrots – 1/2 bag

Boneless Skinless Chicken Breast – 1 large

1 Bottle of Teriyaki Sauce -your favorite brand

****My veggies were all fresh this time but I often use frozen or a combination of fresh and frozen.

 20130813_155807Chop Vegetables into Bite Size Pieces and Place in a Microwave Safe Bowl

**Add about 1/4 cup water, cover with glass or other microwave safe lid and microwave about 7 minutes

While the veggies are cooking, cut chicken into bite size pieces

Heat two tablespoons of oil in a large skillet over high heat

Add chicken and cook until done.

 Remove chicken from pan and add vegetable

Stir fry until desired tenderness is reached

If they seem to be burning before getting tender, turn the heat to med or med-high

Add Chicken to Vegetables then Pour in Teriyaki Sauce to Taste

Stir Fry to Coat; Add More Sauce If Needed

Serve over Steamed Rice – (We Like Jasmine)

Variations:  Try adding sesame seeds, cashews. cauliflower, beef or pork.

**I partially cook the vegetables in the microwave before stir frying to speed up the cooking time.

That’s how we ended up with Easy Chicken Teriyaki Stir Fry from a Summer Time Party!
