This is a wonderful appetizer or side.  Best of all, besides the taste, it literally takes ten minutes (at the most) to make AND you can make it right in the serving dish!  I’ll show you how I used the 7-Day Switch Up to make this recipe at home.

Here’s the Recipe:

  • 1/3 cup olive oil
  • 3 Roma tomatoes
  • 4-5 green onions
  • 8 oz Feta cheese – crumbled
  • 2-3 tsp Greek seasoning
  • 1-2 Tbsp Balsamic vinegar

Rinse onions

Clean tomatoes with a damp Viva® Vantage®

Cut the green part (only) of the onion into small slices

Dice tomatoes

On a large platter drizzle olive oil until a thin layer covers the bottom

Add tomatoes, green onions and feta

Sprinkle with Greek seasoning

Using a large spoon, carefully combine ingredients until coated with olive oil

Drizzle with Balsamic vinegar

Serve with toasted baguette slices

Ingredients
  1. 1/3 cup olive oil
  2. 3 Roma tomatoes

  4. 8 oz Feta cheese – crumbled

Instructions
  1. Cut the green part (only) of the onion into small slices
