Before we moved to Texas we lived in Pennsylvania for ten years.  They don’t grow many of the same vegetables that I grew up eating in the South.  Their summers are too short to grow things like black eyed peas and okra but one thing they grow well is CORN…acres and acres of corn.  In late July and early August you can buy it LITERALLY on every corner..and I did!

Now we live in Texas and one thing Texans do really well is GRILL.  My husband loved to grill before we moved here but since the “grilling season” lasts a lot longer here than in Pennsylvania he’s gotten REALLY good at it.

It was after reading through some of his grilling books that we realized the grill isn’t just for meat.  We’ve cooked everything from cornbread to brisket on the grill.  When it’s 105 degrees we love cooking as much as we can without the oven.  This Grilled Corn on the Cob recipe is very simple and doesn’t require many ingredients.  We have always done it with fresh corn but frozen could easily be substituted.

Here’s the Recipe:

Corn – 1 per person

Olive Oil

Place corn in a large pot and cover completely with water.  Boil on stove for about ten minutes.  This can be done the day before if desired.

*Cooking Tip: Do not add salt to the water as you boil the corn.  It can cause the corn to become tough.  Salt at the table

Remove from water and let the corn drain.  Brush all sides of corn with Olive Oil to prevent sticking to the grill grates.

Or for faster and easier cooking, cook in microwave

Just before your meat is ready, place corn on grill over direct heat. Grill for a couple of minutes until it’s as dark as you like, repeat until all sides are grilled.

 

 We enjoy some “starches” with our grilled meat!

Maybe a salad would be a good idea.

  3. Remove from water and let the corn drain.
  4. Brush all sides of corn with Olive Oil to prevent sticking to the grill grates.
  5. Just before your meat is ready, place corn on grill over direct flame or coals.
  6. Grill for a couple of minutes until it’s as dark as you like, repeat until all sides are grilled.
