We just got back from a wonderful vacation in Colorado (more later on that) and it’s been HARD to get back into the swing of things…starting school, my husband back to work, our daughters getting into their work schedules, and getting my parents settled in after their move from Alabama.  Things are bustling around here!  

Being on vacation means LOTS of eating out, which I enjoy very much.  Unfortunately, I get a little “spoiled” and find it hard to get back to cooking dinner.  Although I’ve been temped to “call for pizza”, I haven’t….yet.  Instead I’ve opted for quick and easy meals like this Hawaiian Fried Rice.

The inspiration for this dish came from my son’s favorite pizza toppings, ham and pineapple.  Using some leftover rice and Smithfield Anytime Favorites Hickory Smoked Diced Ham really cut down on my prep time.  I love using the Smithfield Anytime Favorites!  The Diced Ham was perfect for my Hawaiian Fried Rice, but with 20 different cuts to choose from, quick and easy meals are practically endless.

Here’s the Recipe:

  • 4 cups cold rice
  • 1 cup canned pineapple chunks
  • 1/2 cup pineapple juice (from can of pineapples)
  • 8 oz Smithfield Anytime Favorites Hickory Smoked Diced Ham
  • 3/4 cup cooked broccoli – cut into small pieces
  • 1/2 cup cashews
  • 2 Tbsp diced onion
  • 3 Tbsp soy sauce
  • 1 Tbsp peanut oil
  • 1 Tbsp rice wine vinegar
  • 1 1/2 tsp fresh ginger (or about 1/2 tsp ground)
  • 3 tsp vegetable oil
  • hot sesame oil – to taste

It can be helpful to put all ingredients in small bowls to have them ready when needed

Mix soy sauce, rice wine vinegar, peanut oil, pineapple juice and hot sesame oil in a bowl and set aside

Add 1 tsp vegetable oil to large skillet (preferably with high sides)

Add onions and saute until desired tenderness 

Add Smithfield Anytime Favorites Hickory Smoked Diced Ham and stir fry until heated through

Add broccoli and fry until heated

Add ginger and garlic and saute 1-2 minutes, being careful the garlic doesn’t burn

Remove from skillet and set aside

Add 2 tsp of vegetable oil to skillet with cashews and stir fry about 2 minutes

Remove from skillet and set aside with ham and broccoli

Add cold rice to skillet and break apart any chunks

Stir fry rice until heated through

Add ham mixture and pineapples to rice

Gently mix together

Pour pineapple juice mixture into skillet and toss to coat

Stir fry 2-3 minutes to make sure sauce is incorporated and all ingredients are heated through

Ingredients

Notes
  1. It's important to use cold or room temp rice. Using hot or warm rice will cause the dish to be "sticky".
