Pear Spinach Salad

Fall is a great time for seasonal food…pumpkin, apples, caramel and pears!  I’ve seen a surprising number of recipes for pears this season and it reminded me of one of my favorite salads….Pear Spinach Salad.  

I first had it a few months ago when a friend brought it to church for lunch.  It looks like any “ordinary” fruit and spinach salad but there one surprise….the dressing.

Our friend brought the dressing in a small container and mixed it into the salad just before serving.  It looked good so my husband and I both tried some.  It was delicious but after the first bite we looked at each other and asked, “What is that on the salad?  It takes like syrup.”  A few bites later and our curiosity got the better of us (and when I say “us” I really just mean “me”), so I asked.

Sure enough!  Plain old Maple Syrup!  

I know it sounds strange but it’s really delicious!  I’m pretty sure it wouldn’t work on just any salad or with just any fruit, but with the pears it’s perfect!  

Here’s the Recipe:

3 cups baby spinach – uncooked

1 Asian pear – sliced

¼ cup fresh Parmesan cheese (cut into small cubes)

½ cup chopped pecans, walnuts or almonds

¼ cup real maple syrup

Salt and Pepper to taste

 

Wash and dry spinach if needed

De-stem spinach if desired

Place spinach in a large bowl and top with pears, nuts and cheese

Sprinkle with salt and drizzle with maple syrup

Toss to coat

Add more syrup or salt and pepper as needed

    This salad sounds so delicious! While the syrup sounds odd it also sounds like it is the perfect way to top off the salad.
