Bacon Chicken Tomato Tortellini

Before I started this blog, I was NOT a blog reader.  In fact, I could count on one hand (probably with fingers left over) the number of times I had (on purpose) read someone’s blog.  However, once I started blogging, I realized the time, effort and energy that goes into it and how much I wanted others to read what I’d written, so I began to read other blogs….mostly food.  

One of the blogs I read on a regular basis is Foody Schmoody.  She has great “practical” recipes.  You know what I mean, recipes you’d actually try, food your family would really enjoy, things your kids would eat.  Besides all that, she just seems like a real “down-to-earth-gal”, plus I love her name!  Go to her “about me” page to see the explanation.    

A couple of weeks ago, she posted BLT Tortellini…which I “Pinned” (you know, saved on Pinterest)  I love tortellini but don’t have many recipes for it so I thought this might be fun to try…besides, it has BACON!  I added it to our dinner menu and bought the few things I needed for it at the store the next week…or at least that’s what I thought.  See, I was going to substitute spinach for the kale in her recipe, but when I started to make dinner I realized I FORGOT to buy the spinach!  Great!  Since it was too late to run to the store, I dug around in the freezer and found a small piece of “left over” chicken that needed to be used.  So, I give you….Bacon Chicken Tomato Tortellini!

I knew my husband and I would like this dish but wasn’t sure about the kids, but they really liked it, too…even my daughter who isn’t really a fan of tortellini.  It doesn’t have a lot of sauce like your typical pasta recipe but it’s so YUMMY and SUPER easy to make!

I am going to make this again and hopefully, use some spinach or kale.

    Thanks for the recipe suggestion. It looks quick and easy and I think I will try it with broccoli.

    Hi Danita. I’m stopping over from Let’s Get Real. It is so nice to hear that I’m not the only one that forgets ingredients and then has to improvise. Tortellini is one of my daughter’s favorites and my boys all love bacon. I’m excited to try this one.

    I love Christine at Foody Schmoody. Your adaptation of her recipe looks great and I love how you improvised. I often forget ingredients and have to do the same thing. Thanks for sharing on Merry Monday.

    This looks fantastic! It certainly looks like it would have plenty of flavor with both the bacon and the sun-dried tomatoes. I wonder if you could serve it cold? Thanks for sharing on What’d You Do This Weekend.

      You know Linda, that might not be bad. If it works it could be a great take anywhere dish. I might have to try that.
