BBQ Pork Sandwiches….easy dinner for busy families!

Fall, or so they call it here in Texas, is a very busy time of year for us.  I know this is the case for many families.  For us it’s not all year long, for which I am thankful. 

As a face painter, fall is our oldest daughter’s busiest season, our middle daughter is training for her black belt test in a few weeks and our son in playing PeeWee football.  My parents are in the process of moving here and have been visiting this week to look for a house.  We have a lot going on.

I heard a mom at football practice the other night say that she couldn’t remember the last time she had cooked dinner for her family and they had eaten together at home.  It made me very sad.  Having family meals has always been very important to us.  Believe me, I know how difficult it can be to cook for your family and be on the go, which brings us to this post……it does require a little planning but it can be done.  

These BBQ Pork Sandwiches are one of the easiest and simplest dinners EVER.  It can put a home-cooked meal on the table for your family in no time.  It could be served with chips, but for a better option serve with raw veggies.  A can of baked beans takes less than five minutes to heat up and goes really well with BBQ.  It doesn’t have to be fancy to be good!

We had these this week on a day that we were going to be out most of the day so I put them in the crock pot on low before we left and they were perfect when we were ready for dinner, which happened to be at various time that day.

Boneless Pork Ribs

BBQ Seasoning

BBQ Sauce – your favorite

Hamburger buns

BBQ Pork in crockpot

Pour about 1/4 cup water in the bottom of crock pot

Layer ribs in crock pot, sprinkling BBQ seasoning on each layer

BBQ seasoningThere were several brands of BBQ seasoning at the store

Cook on low all day or on high for 3-4 hrs

BBQ sandwich 2Serve with or without a bun and top with your favorite BBQ sauce

To all my Texas friends who question BBQ as a description for pork….Beef ribs are good too.

 If you think this looks good…wait till you see what we did with the leftovers!

Ingredients
  1. Boneless pork ribs (can use beef)
  2. BBQ Seasoning
  3. BBQ Sauce
  4. Hamburger Buns
Instructions
  1. Pour about 1/4 cup water in bottom of crock pot
  2. Layer ribs and season each layer with BBQ seasoning
  3. Cover and cook on low all day or high 3-4 hrs
  4. Meat will be tender and shred easily when done
  5. Serve with or without bun and top with your favorite BBQ sauce
Notes
  1. To complete this easy meal serve with raw veggies, salad or canned baked beans
  2. This meal "keeps" well if your family is eating in "shifts". When done, turn the crock pot to "keep warm" setting and it will stay for several more hours

    Oh! I am going to attempt to make this for dinner tonight. I don’t have pork ribs, but I have a pork roast. I think it will work?? I’ll try it and see. BBQ sauce can cover a multitude of cooking errors. 🙂

      RaShell, pork roast will absolutely work! For this one I actually used ribs and thick boneless pork steaks. I just tucked them under the ribs so they wouldn’t show.
