It’s Fall…or at least it was Saturday!

I must confess, although I enjoy being a “Texan”, I MISS the Fall, very much!  Lately, it seems as if everyone out there has been posting comments about how much they are enjoying their “cool” weather, sharing their favorite Fall activities or baking up something yummy that is Fall related.  Me?  I sit in my wonderfully air conditioned house, being extremely thankful that the temperature has “dropped” into the 90’s, and plan menus that include ice cream and grilling out, while enjoying all your wonderful Fall photos and stories. 

Then it finally happened……FALL…or at least the “Texas” version of it.  

First, it started off with Rain.  For a whole entire day…rain.  Not a thunderstorm, just gloriously cooling RAIN! My oldest daughter and I had errands to run, including the grocery store.  We got wet…but it was fine.  My middle daughter and son went for a walk, in the rain.  That’s how we “Texans” celebrate rain without a thunderstorm.  

In the evening it stopped raining and the temperature got into the 60’s so we slept with the windows open!  I love open windows!  

Saturday it was only in the 80’s and we didn’t need to turn on the air conditioner ALL day…at least downstairs.

Then, we had our first “Fall”  face-painting gig.  My oldest daughter is the painter and I do glitter stencils.  It was an outside event and by the time we were packing up around 9:00 pm we were feeling a little “chilly” in our sleeveless shirts and capris.  (The car said it was 69 degrees)  

To top it all off, while sleeping with the windows open for a second night…I had to pull up the comforter because I was cold!  

All this “cool” weather, along with the purchase of apples at the grocery store, made me want to bake some Fall recipe and blog it.  For breakfast Sunday morning, I decided to try a new apple muffin recipe I found in one of my cookbooks.  Well, it needs a little “tweaking”.

Fortunately, we also enjoyed another “Fall Favorite” this weekend…soup.  We haven’t had soup in months. I just can’t bring myself to make soup when it’s hot.  The soup we had is called “Big Red Soup” (adapted from The Ultimate Soup Cookbook). I served it with chicken quesadillas and tortilla chips.

Ingredients listed at the bottom of the post.

Saute onions in oil over medium heat until translucent

Add meat and brown

Add tomatoes, broth, water and spices

Cook in crock pot on low for 10 hours, on high for 4-5 or simmer on stove about 2 hours

Ingredients
  1. 2 tablespoons vegetable oil
  2. 2 pounds beef stew meat
  3. 3/4 cup chopped onions
  4. 2 cloves garlic
  5. 2 cans (14 1/2 oz ea) tomatoes
  6. 1 can (10 1/2 oz) beef broth
  7. 1 can (10 1/2 oz) chicken broth
  8. 1 can (10 3/4 oz) condensed tomato soup
  9. 1 teaspoon ground cumin
  10. 1 teaspoon chili powder
  11. 1 teaspoon salt
  12. 2 teaspoons Worcestershire sauce
  13. 1/3 cup salsa
  14. 1/4 cup water
Garnish
  1. Fried tortilla strips
  2. Grated cheese
Instructions
  1. In large skillet or dutch oven saute onions until translucent
  2. Add beef and brown
  3. Transfer to crock pot and add remaining ingredients
  4. Cook on low for about 10 hours, on high about 4-5 hours or simmer (with lid) on stove in stock pot or Dutch oven about 2 hours
Notes
  1. I like to serve with quesadillas and tortilla chips

    I’ve never had the fall season anywhere that I’ve lived! I feel like I’m missing out! I’m glad you got to make soup though! Hopefully your weather is cooling down. Thanks so much for sharing this on Saturday Night Fever! Pinning now…See you this Saturday!

    This is probably the reason why I can’t find myself moving down south. I love this cool fall weather right now here in New Jersey. It’s just so relaxing! Your recipe looks absolutely delicious! It is perfect for the fall weather.

      Thanks for pinning Denise! I know exactly what you mean. We lived in PA for 10 yrs and the 80″s seemed HOT to us, here the 80’s mean bringing out the jeans and boots. Funny how we acclimate.
