Butterscotch No Bake Cookies with Goldfish Crackers

Hospitality is something very important to our family.  We’ve tried to teach and demonstrated it to our children by joyfully inviting people into our home and making them feel welcome. 

Special occasions or events are always a good “excuse” to have people over.  Of course, everyone knows the “Big Game” is fast approaching and no doubt many will be inviting friends over to watch.  

We’ve been watching football all season and enjoyed some playoff’s and bowl games recently.  What goes better with football than snacks?  And if you’re having a crowd over, there HAS to be food, right?

When we invite friends over it means bringing the whole family.  Often children don’t enjoy the same types of snacks as the adults, so today I’m sharing a fun and tasty treat with a “secret” ingredient that kids (and adults) will love … Butterscotch No Bake Cookies!    

“No bake” cookies are always a hit, and super easy to make.  When preparing for a party it’s nice to have simple foods that taste great.  Hospitality doesn’t have to mean elaborate or fancy.  Most people appreciate simple and delicious.  

Butterscotch No Bake Cookies only require 4 ingredients, take less than ten minutes to whip up and are a great way to get your children involved, allowing them to experience first hand the blessings of hospitality.    

So what’s the “secret” ingredient in these No Bake cookies…..Goldfish crackers!  Who knew you could make cookies out of those tasty little treats?

Goldfish crackers have been a favorite at our house for years…..literally.

Honestly, I buy the 30 oz. carton and I don’t even bother putting them away.  I just leave them on the counter for easy access!

Although, I will admit, after I purchased this carton on Rollback at Wal-Mart, I did hide them in the closet until I made the cookies.  I knew there was a good chance they would be gone if I didn’t.  Everyone was thrilled when I brought them out.  I’m glad I bought the 30 oz carton…they’ve been enjoyed in “snack mix”, eaten by themselves and of course, in the No Bake Butterscotch Cookies. 

Here’s the Recipe:

  • 1 package of butterscotch chips (about 1½ cups)
  • 1 tbsp shortening
  • 1 cup pretzels
  • 2 cups original Goldfish crackers

*After I made these I thought they might be good with peanuts*

In a medium sauce pan over medium heat, melt butterscotch chips and shortening

Stir until smooth

*This could also be done using a double boiler

Add pretzels  and Goldfish crackers

*I did break up the pretzels a little, but not the Goldfish crackers

Stir gently until well coated with butterscotch

Drop by spoonfuls onto waxed paper and allow to harden

Store in an airtight container until ready to serve

  1. 1 package of butterscotch chips (about 1½ cups)

  5. Optional - peanuts
Instructions
  1. In a medium sauce pan over medium heat, melt butterscotch chips and shortening
  2. Stir until smooth
  3. Add pretzels and Goldfish crackers
  4. Stir gently until well coated with butterscotch
  5. Drop by spoonfuls onto waxed paper and allow to harden
  6. Store in an airtight container until ready to serve

    Oh my heart, those look so delicious! What a great and unique idea to make up quick and easy cookies. My kids eat the Goldfish crackers so fast I just leave my 30 oz box out too! #client
