Caprese Chicken #sp

We eat a lot of chicken so I’m always looking for new chicken recipes.  Recently, I was introduced to the Mezzetta Everything Spreads.   They’re called “Everything Spread” because that’s what you can do with them….Everything! The spreads are available in four mouthwatering flavors.  I chose Garlic & Parmesan as well as Sun-Dried Tomato & Basil.  

The Garlic & Parmesan was just crying our for some yummy bread to spread it over, while the aroma of spices in the Sun-Dried Tomato & Basil screamed, “Chicken and Pasta!”  Of course, what goes better with chicken and pasta than cheese?  Pretty soon my husband had helped me come up with this amazing dish!      

Once we got it all put together we decided it reminded us of Caprese Salad, a traditional Italian salad made with sliced fresh mozzarella, tomatoes and basil, seasoned with salt and olive oil.  Originally, it was made to resemble the colors in the Italian flag (red, white and green).  In Italy it is usually served as an antipasto (starter) not a side dish but with the help of Mezzetta, Caprese Chicken is a perfect quick and easy weeknight dinner.  

For a great side with this meal try a little of the Sun-Dried Tomato & Basil spread on pasta.  Serve the Caprese Chicken over the pasta allowing some of the yummy melted fresh mozzarella to spill over onto the pasta…..DELICIOUS! 

Use the Garlic & Parmesan on your favorite bread. Toast under the broiler and you have a complete meal! 

Here’s the Recipe:

  • 2-3 large boneless skinless chicken breasts
  • Mezzetta Sun-Dried Tomato & Basil Spread
  • 1/4 tsp Italian Seasoning
  • Olive Oil – enough to just cover the bottom of skillet
  • Fresh mozzarella cheese – sliced
  • Fresh basil leaves – 1 for each piece of chicken
  • Oven proof skillet

Preheat oven to 375 degrees

Cut chicken into reasonably sized portions

To allow for more even cooking, pound any thicker pieces to match the rest in thickness

Sprinkle with Italian seasoning

Heat olive oil over medium high heat in oven proof skillet

Add chicken and brown well on both sides

When browned, place skillet (with chicken) directly into oven to finish cooking

Cook until completely done 15-30 minutes, depending on thickness of chicken

Generously spread both sided of chicken with Mezzetta Sun-Dried Tomato and Basil Everything Spread

Top with fresh mozzarella slices and return to oven for a couple of minutes to allow cheese to slightly melt

Remove from oven and top with fresh basil leaf

Serve immediately

    We eat a lot of spicy food in our house. If it were deemed normal, my wife would probably add spice to her cereal. For that reason, I think the red hot chili pepper variety would be the preferred variety in our home.

    This Chicken Caprese looks amazing!! Savory Garlic would definitely be my first choice… Or… the Sun-dried Tomato Basil… I am so bad at making decisions! I’d have to open them all and make myself a variety plate. LOL!
