For a while it seemed as if every other recipe here was something “Mexican”.  I wondered if you were thinking that’s all I knew how to cook, or if that’s all my poor family ever had to eat. Well, it’s not ALL we eat, but we do have it pretty often.  I decided to post other things and now it’s time for more Mexican recipes…YEAH!  

A couple of weeks ago was Cinco de Mayo, and although it may not be what you think it is, we did see it as a great opportunity to eat some Mexican food.  My son had been asking for Churros for a while and I just hadn’t gotten around to making them.  

I got this recipe a couple of years ago from Buddy, the Cake Boss….you know, the guy from Hoboken, NJ with the amazing bakery and reality TV show?  I’m not sure he still does, but for a time he had another cooking show and the one time I watched he was making Churros! I love Churros, and so does everyone in my family.  Quickly, I hit record on the TV, knowing I was never going to be able to write as fast as he was talking.  I watched, stopping and starting the show several times before I finally got it all down.  I was so excited about having the recipe I watched the whole show again with my girls….who were also excited.  

The recipe is a basic cream puff batter but instead of baking it, you pipe it into hot oil and fry it.  I know, I know, some of you are thinking, “Man, she fries A LOT of food!”  To that I offer only one explanation….I’m from the South.  That’s what we do.  I’m trying to cut back…really I am.  

These Churros aren’t hard to make and they are best eaten warm.  

Here’s the Recipe:

  • 1 cup water
  • 1/3 cup butter
  • 2 Tbsp packed brown sugar
  • 1/2 tsp salt
  • 1 cup all purpose flour
  • 3 eggs
  • 1/2 tsp vanilla
  • Oil for frying
  • 1/2 tsp ground cinnamon
  • large pinch cayenne

In a saucepan over medium heat, bring water, butter, brown sugar and salt to a boil

Add all flour and stir with wooden spoon until ball forms and all dough pulls away from sides of pan

Remove from heat and allow to cool just a minute before adding eggs

Add eggs one and a time and stir until well incorporated before adding next egg

Add vanilla and stir again

Heat about 3 inches of oil in a large skillet (or deep fryer) to 375 degrees

Combine cinnamon, sugar and cayenne and set aside

Prepare a pasty bag with a large star tip

Fill with dough

When oil is ready, pipe strips of dough about 4 inches long into oil

I use a knife to get it off the tip, otherwise it won’t come off

Fry about 2 minutes, turning once

Remove from oil and drain on paper towel

Immediately sprinkle with cinnamon sugar mixture
