What is Cinco De Mayo, anyway?

History.com says, “Cinco de Mayo—or the fifth of May—commemorates the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). A relatively minor holiday in Mexico, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations.”

Wikipedia says, “In the state of Puebla, the date is observed to commemorate the Mexican armys unlikely victory over French forces at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza Seguín.Cinco de Mayo is not Mexico’s Independence Day—the most important national patriotic holiday in Mexico—which is celebrated on September 16.”

So, I supposed for people who are not of Hispanic descent it’s just a great reason to celebrate Mexican Food!  Ok, that works for me!  I’m not sure there’s any food I love more than “Mexican”….or Tex-Mex.  

In honor of Cinco de Mayo, let’s Celebrate with some Mexican Food!

  • Possibly the best way to start off a Mexican meal (or any meal really) is with some good ol’ homemade Tortilla Chips and Salsa…aka the Official Snack of the State of Texas.  
  • If you don’t have time for homemade, I have the perfect solution…Salsa in a Snap!
  • A quick and easy, take anywhere appetizer or party dish is Walking Taco Salad
  • Chicken or Chorizo Quesadillas make a great snack or addition to any Mexican Dinner…also probably my FAVORITE way to use up left overs!
  • These cook-all-day Carnitas make a delicious main course!  We love it wrapped in a warm tortilla with a little cheese, cilantro and lime juice.
  • Enchiladas are a Mexican restaurant “staple”.  The Chicken used to stuff them can also be used for Chicken Tacos.
  • Last by not least, Authentic Mexican Rice!  Really, it is close.  I’ve been to Mexico and eaten the rice.  I don’t use the term “authentic” about most of my “Mexican” dishes, but this one really is.  If you added some green peas and carrots it would be just like the real thing.  

We’ll be eating Mexican food tonight…what about you?

Our family lives in Texas as well, and Mexican dishes or Tex Mex are certainly popular and a favorite of ours. However, we usually prefer true Mexican to Tex Mex. But, it’s all good! Thanks again for sharing.

    Mexican food is great. Enchiladas, tacos and steak fajitas are all ones that I make frequently for our family.

    I didn’t know that about Cinco De Mayo, always been taught it was Mexico’s Independence Day. It’s amazing to me how much we just take as truth and don’t find out ourselves. Who knew?!?! It’s a huge celebration in Colorado.

    We just love Mexican food…so any reason to eat more is fine by us.

    I’m all the way in the Middle East and I celebrated Cinco de Mayo with homemade Taco Boats. We had a few festivities in the city, but they didn’t start until late, so I didn’t go. When in the US, I would certainly celebrate with Tex-Mex and margaritas. 🙂

    Ok. Pretty much just ate my screen! In Italy we don’t have mexican restaurants AND our grocery stores don’t stock the stuff to make ANY thing (I mean I guess I can make my own salsa…) . Going to try those recipes the second I’m stateside!

    This was really great because i really thought it was Mexican Independence Day…so glad to learn something new. Can you believe I’ve never really had Mexican food? I need to go find me some…this all looks great!

    yeap, that’s about right. We, my people, do not celebrate 5 de Mayo other than to enjoy the day off and to eat one more day our Mexican food, like any other day he he.

    Any excuse to eat Mexican food is cause for a celebration in my book! Took the twins to Mexican last week (we couldn’t last night) and they devoured rice and beans. YUM!

    I took some time off before school starts, so I’m on break and have literally no idea what day it is… so I didn’t know it was Cinco de Mayo, but I did have vegan burritos for lunch! That counts, right?

    Love that you included the history! I’m a history nerd so I love learning new things. I wish I would have read this yesterday, there’s some good ideas for Mexican food (which is my favorite). I guess I can make them even if it isn’t Cinco de Mayo.

    I have so many great memories of vacations in Mexico and any excuse to eat Mexican food is fine by me! I actually made a Tex-Mex meal on Sunday, so I was a day early this year! Thanks for sharing all the great food!

      I totally understand. We know a lady that is Mexican and grew up there. After she moved to the states she asked what Cinco de Mayo was? Not really the “important” holiday there that we might think. Thanks for stopping by.
