Honey Glazed Carrots

 It appears I’ve been posting A LOT of desserts lately!  I guess my “sweet tooth” must be working overtime.  I thought it might be time for something a little more “healthy” so I decided to make these Honey Glazed Carrots for dinner…and the blog.  

They were quick and easy.  No peeling and chopping is required.  They go in a very hot oven so cooking time is only about twenty minutes, depending on the size of your carrots. To go with these carrots,  I prepared pork chops on the griddle.  I used the griddle because the oven was WAY too hot for anything else.  Sweet always goes well with pork. 

Here’s the Recipe:

  • 2 lbs baby carrots with tops
  • 2 tsp olive oil
  • 3 Tbsp butter
  • 1/2 tsp kosher salt
  • 1/4 tsp block pepper
  • 2 Tbsp apple juice
  • 2 Tbsp honey
  • 1 Tbsp water

Place a small roasting pan in oven and preheat to 500 degrees

Cut tops off carrots, leaving about 1 inch of green

When pan and oven are preheated, remove pan

In hot pan stir together olive oil and 1 Tbsp butter

Add carrots, salt and pepper, tossing to coat

Bake 10 minutes

While carrots are baking, melt remaining butter in a small saucepan

Add apple juice, honey and water

Bring to boil, reduce heat to medium and cook about 5 minutes or until mixture is “syrupy”

Drizzle syrup over carrots and toss to coat

Return to oven for about 5-7 minutes or until carrots are tender

*If you don’t have baby carrots just cut larger ones in half lengthwise and cook as directed

I’m not sure any recipe with 3 tablespoons of butter can be called “healthy”… but they were good!

    Sounds delicious. I’ve never made carrots in the oven before. I’ll have to try it. I wouldn’t be concerned with the butter. It’s the honey that I’d be worried about.

    I’m not a big fan of carrots, but you make these look so good. Butter makes everything better. Sounds healthy to me!!

    Yum! I have made these before and they are a great way to change up carrots! They look delicious!
