 Cookies for Breakfast?!  YEAH!

I have always loved breakfast, even if it was early.  My grandmother was “old school”, she made my grandfather a BIG breakfast everyday and since that’s where I spend a lot of time in my preschool years, I grew up thinking that’s what everybody did.

My husband’s mom made him breakfast too, but as he got older he realized he’d rather SLEEP the extra fifteen minutes instead of eating.  For years, even after we were married and had children, he skipped breakfast.

It wasn’t until we moved to Texas and were homeschooling that we all started eating breakfast together.  My husband decided the breakfast table would be the best time to have our family devotions, so leading by example, he began getting up WELL in advance of the designated breakfast time.  This was quite a change from the man who slept until the LAST possible moment after hitting the snooze button WAY TOO many times!

This has worked well for our family.  It’s nice to have everyone together before Dad goes off to work and the rest of us get busy with other things.  Most people in our family still enjoy a big breakfast (best when it’s prepared around 10 am on a day off) and pancakes are always welcome, especially OATMEAL COOKIE PANCAKES!

Here’s the Recipe:

  • 1 cup oatmeal
  • 1 cup all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup brown sugar
  • 1 tsp. cinnamon
  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup sour cream
  • 1 tsp. vanilla
  • 1/4 cup oil

Mix dry ingredients in a large bowl. Mix wet in a separate bowl. (In order to cut down on cleanup, I mix the wet ingredients right in the measuring cup.  Measure the milk, then the oil, then add the other ingredients and whisk gently until well combined.)

Add wet ingredients to dry and stir being careful not to over mix. I use a large whisk. Batter will be lumpy and somewhat thin.  Mixing too much causes “tough” pancakes.

Spray griddle with non stick cooking spray.  Substitute a large skillet if you don’t have a griddle.

Heat to 375 degrees.  Ladle the batter onto griddle or skillet.

When bubbles start to form and burst, it’s time to flip.

It may take a few batches to cook them all.  To keep them warm put them on an oven proof platter and keep in a warm oven, about 175-200, until ready to serve.

    I’ll have to try these out on Grumpy – Oatmeal Raisin is his favorite cookie, so maybe this will go over well with him!

    These look yummy! Perhaps this will be a good alternative to Grandpa’s “boring” oatmeal.
