Pineapple Casserole

This is my favorite side dish to serve with ham

This is a wonderful, unusual recipe that I got from a very sweet friend who spent her life serving the Lord on the mission field.  Instead of telling you about this dish, I’d like to tell you about her…

Her name was Eunice and she grew up in Africa as the daughter of missionaries.  I met her when both our families moved to Pennsylvania around the same time.  She had lived and traveled all over the world and the stories she could tell about snakes and other “creepy-crawly” things were scary and very entertaining, the best included black mambas and army ants.  She often told these stories to the elementary students at our Christian school, for the sole purpose of encouraging and teaching them that God is in control and trusting in Him brings peace and contentment to your life.

She and her husband served as missionaries on the island of Roatan before moving to Pennsylvania to work at a large mission board.  She had lupus and the tropical climate of Roatan was causing too many health problems for them to remain.  Although the cooler climate helped tremendously, there were still times when she didn’t feel well, but she never complained or let it get her down. God used her husband to open the doors of ministry for our family at the same mission organization.

She and I were able to serve together many times doing something we loved…cooking. Groups of all sizes came to the mission for training purposes and we had the privilege of cooking and serving meals to many of them.  She was a joy to be around and taught me many things as I worked along side her.  

She passed away about this time last year after a two year battle with liver cancer.  All through her sickness and treatments she remained joyful.  She would send out email updates to friends and family with encouraging words about how she was doing.  Just before she passed away she dictated one last email filled with hope and encouragement to us all. She knew it was her last letter but didn’t want us to be sad or discouraged for her as she reminded us that through Christ we will see her again.

I love recipes with fond memories and every time I make this Pineapple Casserole I am reminded of the wonderful times I had working along side my sweet friend, Eunice.  

Here’s the Recipe:

  • 1 large can pineapple – chunks or crushed- drained
  • 1 cups grated cheddar cheese
  • 1/2 cup brown sugar (white works if you don’t have brown)
  • 3 tablespoons flour
  • about 3/4 tube Ritz crackers – crushed
  • 1/4 cup melted butter
***For a 9×13 pan, double the recipe and use 1 can crushed pineapple and 1 can chunks or tidbits***

Preheat oven to 350 degrees

Place pineapple in bottom of glass baking dish (pie pan size for single recipe)

In a large bowl, mix together sugar, flour, and cheese

In a separate bowl, combine crackers and butter

Spread sugar and cheese mixture over pineapple

Top with crackers

Bake about 20-30 minutes or until cheese is melted and casserole is heated through

You will probably have to explain to people what it is, but once they try it…

They will love it!

Ingredients
  1. 1 large can pineapple - chunks or crushed- drained

    All these years I have been eating this and did not realize it came from Eunice. She was a jewel. She is one who no doubt was greeted in heaven with “well done, good and faithful servant.”

    I too have fond memories of Eunice! Thank you for sharing one of her recipes. I have always appreciated the memories of the person/place associated with a recipe.
