Strawberry Blackberry smoothieMy son recently got braces and as anyone who has or has had braces knows, your eating changes.  Some foods are “off limits” altogether, some have to be modified, the way some are eaten has to be changed and some just aren’t worth the trouble.  

For a few days after he got them on, his mouth was really sore so chewing was difficult.  He ate a lot of soft foods but since he’s a twelve year old boy it takes a good amount of anything to fill him up.  For some reason “soft” foods seem less filling.  We tried to come up with creative ideas to help fill him up.  He loves fruit and yogurt so we decided to try adding smoothies to his meals.

I read a great tip on another blog about making smoothies.  Since they are usually made with ice (to save on calories) the consistency can be a little “thin”.  (If you’re an active twelve year old boy and adding these to a meal it doesn’t much matter, but if you’re the less active mom of a twelve year old and think this might be a good meal replacement, it does matter.) The key ingredient to thickening is Xanthan Gum!  Now, if you’ve never heard of Xanthan Gum, you’re not alone.  I think I had seen it on the back of boxes in lists of ingredients but had never purchased it until recently.  I made a couple of gluten free cookie recipes from scratch and they needed Xanthan Gum.  I will say, if the thickness doesn’t matter to you don’t bother getting it.  It’s expensive…but it lasts a very long time…only about a quarter teaspoon is used for anything.  Since I had some I decided to try it…what else am I going to use it for?  Thankfully, we don’t have to be gluten free.

The week I made these strawberries and blackberries happened to be on sale…so we had Strawberry Blackberry Smoothies.

Here’s the Recipe:

  •  Yogurt – 2 small – strawberry or strawberry banana (Greek can be used)
  •  1 banana
  •  1 cup ice
  •  1/4 cup milk
  •  1/2 cup sliced strawberries
  • 1/2 cup blackberries
  •  1/4 cup honey 
  •  1/4 tsp Xanthan Gum (optional for thickness)

*Makes enough for 2 smoothies*

Blend on high until smooth and no ice chunks remain

Can be topped with a small dollop of Cool Whip or Redi Whip

Ingredients

Instructions
  1. Combine all ingredients in blender
  2. Blend on high until smooth and no ice chunks remain
Notes
  1. Greek yogurt adds protein and less sugar
  2. Artificial sweetener may be substituted for honey if desired...adjust amount to taste

    that looks yummy! I need to get back into a smoothie groove–mango is my favorite but I’m sold on anything with strawberries too! I love your presentation as well!

    Looks and sounds great, I don’t use ice in my smoothies because it waters them down but the biggest reason is I live in town. Our water has a TON of chlorine in it which I am allergic to. Makes me very sick.
    I use frozen bananas instead. It makes the smoothie thick and creamy.

    I’ve never heard of Xantham gum. . interesting… may need to look into that.. Also I’ve never had a blackberry….

    This looks delicious! I just finished a batch of homemade yogurt this morning. Looks like I am going to have to pull out the last of the strawberries I froze from the garden last year and give this recipe a whirl. Good thing spring is here and fresh strawberries are on their way. Yum,,,breakfast here I come!!!
