Tortellini Soup

 I’d like to introduce you to my new favorite soup!    

It’s finally gotten cold here and when it gets cold I love to make soup.  This tortellini soup is new to our family.  It was served to us by our friends at our Wednesday night “nutrition video dinner”.  Let me just tell you…it is DELICIOUS.  I feel like I can say that since it’s not an original recipe.  I love everything about this soup, the taste, the colorful presentation and it’s super healthy!  It’s all four food groups in a bowl…meat, grain, vegetables, even dairy.  This makes me very excited because as I look back over my blog posts I realize we eat a lot of fried food, not to mention our family has officially entered the season of “indulgence” with our holiday baking and cooking.  This is such a hearty soup that it feels and looks indulgent.  The best part (besides the taste) is it can be made in under thirty minutes.  When you can get a meal that’s healthy, delicious and looks great on the table in that amount of time it’s a keeper!

Here’s the Recipe:

  • 1/2 pound lean ground beef
  • 1/2 lb Italian sausage
  • 15-ounce can white beans, drained (I used navy)
  • 14-ounce can petite diced tomatoes, undrained
  • 2 teaspoons herbes de Provence or Italian seasoning
  • 4-ounces fresh spinach, chopped (about 1/2 9 oz bag)
  • 6 to 8 cups chicken broth
  • 1 cup shredded carrots (optional)
  • 19-ounce bag cheese tortellini 

****For a milder flavor use 1 lb ground beef, pork or turkey

In a large pot, brown beef in a little oil until meat is no longer pink. (Drain if too  much fat) Add remaining ingredients, except tortellini, simmer for 15 minutes. 

While soup is simmering cook tortellini according to package directions

Put tortellini in a bowl and ladle soup on top.

Serve with warm bread or toast

***It’s very important to keep the soup and tortellini separate.  The pasta will absorb the broth and become “gummy”.  If you have leftovers store them in separate containers.  Reheat pasta in microwave and soup on the stove.  I added a little extra broth when reheating.

If you think you might not like it because it has spinach…my children don’t like cooked spinach at all and they like this soup.

Soup portion can be made ahead and frozen. When needed just thaw and make the pasta.  

The recipe says it serves 8, but it’s more like 10.

Ingredients
