Mozzarella Stuffed Chicken Parmesan

Chicken Parmesan taken to the next level, proving you can never have too much cheese!

Ingredients

  • 4 Boneless Skinless Chicken Breasts
  • 1/2 cup Italian bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 2 eggs
  • 3-4 Tbsp Olive Oil
  • 1 Jar your favorite Marinara Sauce (or make your own)
  • 1 1/2 cups shredded Mozzarella cheese (divided)
  • Optional: Chopped Parsley for garnish

Also Needed:

  • 3 Shallow Bowls
  • 1 Cast Iron or other oven proof skillet

Instructions

Preheat oven to 400 degrees

  1. Place flour in first shallow bowl

  2. In second bowl, place eggs and beat well with fork

  3. In third bowl, combine bread crumbs and Parmesan cheese

  4. Combine salt, pepper and garlic powder and sprinkle evenly over chicken

  5. Cut a “pocket” in each breasts, making sure not to cut all the way through

  6. Stuff each breast with 2-3 Tbsp of Mozzarella cheese

  7. Add enough oil to skillet to lightly coat the bottom

  8. When oil is hot, take one chicken breast at a time and dredge in flour, coating lightly

    Then in egg, allowing extra to drip back into the bowl

    Then in bread crumb mixture

  9. Place in hot oil and brown on both sides (about 3 minutes on each side)

  10. Adjust heat as needed in order for oil not to get too hot

  11. When chicken is golden brown and crispy, turn off heat and pour over Marinara

  12. Top each piece with remaining cheese and bake at 400 degrees for 15-20 minutes or until internal temperature reaches 165 degrees.  

  13. Remove from oven and top with chopped Parsley, if desired

  14. Serve immediately while the the cheese inside is ooey-gooey deliciousness!

Recipe Notes

*It’s important to make sure oil is hot before place in chicken, otherwise coating will fall off…. sad day!

*Time will depend on thickness of chicken
