The Christmas celebrating season is here and that usually means lots of parties, food, and entertaining. Today on Time Saving Tuesday I’m sharing this #HolidayMadeSimple ice cream recipe for a quick and easy Peppermint Mocha Coffee Punch!
Coffee Punch is one of my go-to holiday or anytime entertaining recipes. I’ve served it at birthday parties, family get-together’s, church Christmas parties and my daughter just gave it to a friend who is trying it out for her wedding reception. It’s easy to prepare and even many “non-coffee” drinker like it. It makes two regular sized punch bowls FULL, so it serves a crowd easily.
The original recipe calls for vanilla and chocolate ice creams. I wanted to give the punch a “holiday twist” so I substituted the vanilla ice cream with DRYER’S SLOW CHURNED® Light Peppermint Wonderland Ice Cream, from Wal-Mart.
Peppermint Wonderland is a holiday, limited edition, peppermint light ice cream with peppermint candy pieces blended together to create a refreshing flavor. It gave the coffee punch just the right amount of peppermint flavor and fun holiday twist I was looking for! Although, after seeing the Limited Edition Peppermint Wonderland, you may have to resist the urge to dig into it. I recommend buying two, you need the whole carton for your punch.
Peppermint-Mocha Coffee Punch is easily served at home or taken with you to a party. The coffee syrup is made ahead and the ice cream needs to be pretty soft when mixing the punch, perfect for the drive to a friend’s house. Remember…use an extra-large punch bowl or make in two batches because the recipe makes a lot..but you’ll need it!
Here’s the Recipe:
- Peppermint Wonderland Ice Cream 1.5 quart
- Chocolate ice cream – 1.5 quart (I also used DRYER’S®)
- 1 1/2 oz. instant coffee (decaf may be used if you like)
- 3 cups water
- 3 cups sugar
- 3/4 gallon whole milk
*To try it out, I only made it for my family, so I cut the recipe. As much as we love this, five of us did NOT need to drink two bowls of punch*
The day before serving…
Place sugar and coffee in a large heat proof bowl or measuring cup
Bring water almost to a boil and pour over sugar and coffee
Stir until sugar is melted and coffee dissolved
Refrigerate overnight
15-30 minutes before serving, remove ice creams from freezer and allow to get very soft, but not completely melted
Place softened ice cream in a large punch bowl (or make in two batches)
Using a potato masher or wooden spoon, mash ice cream and combine flavors
*If making in two batches, use half the ice cream and keep the other half in the refrigerator until needed. It probably won’t be long*
Add coffee syrup and mix some more
*Only use half if mixing in two batches*
Add milk and serve immediately
*If by some chance you have leftover punch, store in refrigerator, it will still be very good the next day*
Garnish with crushed peppermints, candy canes or peppermint sticks!
