Cucumber Tomato Salad
There’s nothing more refreshing on a hot summer day than vegetables fresh from the garden!
A few days ago, our breakfast conversation turned to the subject of vegetable gardens. My husband and I were explaining to our children that our grandparents ALWAYS had a large garden. They lived in the country so they had room for it, and they were from a generation that knew how to do most everything. More was always produced than was needed so they canned, froze and shared it with neighbors. I spent summers with my grandparents so I was able to observe and participate in many of these activities.
Our whole family enjoys fresh vegetables, so in the course of this conversation my husband mentioned that WE should have a garden. Now, I’ve said before that we live in Texas and when people think of Texas, fresh produce isn’t the first thing that comes to mind. It’s hot, dry and we have bad soil. Combine that with the fact that I am known to my family as the “Dr. Kevorkian” of plants, and you get disaster!
Thankfully, we have a neighbor with a small garden. They had more cucumber and zucchini than they needed so they did just what most gardeners do…they gave them away. I was more than happy to be the grateful recipient. This Cucumber Tomato Salad is one of the things we made with the cucumbers. With the zucchini, we made chocolate chip zucchini bars…which counts as a veggie, right?
Here’s the Recipe:
- Tomatoes -1 medium
- Cucumber- 2 medium
- Onion- 1/2 small – thickly sliced
- 1/3 cup water
- 1/3 cup apple cider vinegar
- 1/2 teaspoon salt
- dash of pepper
- 2 Tablespoons sugar
OR for an even easily version…..Marinate the veggies in your favorite Italian Dressing
Cut Vegetable Into Slices
Mix all other ingredients together and pour over vegetables. Toss to coat
Cover and store in refrigerator, stirring occasionally, until ready to serve – best if several hours
**For an even easier and bolder flavor, use your favorite Italian Dressing instead of other ingredients
This is one of the easiest and most refreshing summer salads…even if you have to buy the produce from the grocery store!
- 1 medium tomato
- 2 medium cucumbers
- 1/2 small onion thickly sliced
- 1/3 cup apple cider vinegar
- 1/3 cup water
- 1/2 teaspoon salt
- dash pepper
- 2 tablespoons sugar
- Slice vegetables
- Mix all other ingredients and pour over vegetables
- Cover and refrigerate at least 2 hours, all day is best
- For an even easier salad with a bold flavor use Italian Dressing instead of other ingredients
- Add more or less of each vegetable depending on what your family prefers
