Pepperoni Pizza Bombs aka Bisceroni
Our oldest daughter recently became engaged! We’re all super excited and busy with wedding planning (which explains why there have been fewer posts lately). I’m sure her young man is going to fit right into our family because (among other things) he loves food, almost as much as the rest of us. Today’s recipe for Pepperoni Pizza Bombs, which he called “Bisceroni” comes from him. He brought it to an activity at our house and we all loved it so much we asked him to make it again for us on Super Bowl Sunday.
Wrapping things in a biscuit is all the rage now, and why not? It’s easy, the possibilities are practically endless and amazingly delicious. Pepperoni Pizza Bombs are a quick and easy recipe full of cheesy, yummy goodness that everyone will love!
Here’s the Recipe:
- 1 can biscuits – 16 oz
- 1 lb mozzarella cheese – cubed
- 3-4 oz sliced pepperoni
- 1/4 cup shredded Parmesan cheese
- Optional:
- Garlic butter (melted)
- Italian seasoning
- Pizza or pasta sauce for dipping
Preheat oven to 350 degrees
Cut biscuits in half
Use fingers to flatten biscuit half
Top each half with one slice pepperoni, one cheese cube and second slice pepperoni
Fold biscuit over pepperoni and cheese and roll into a ball
Place in 8-9 inch round pan or cast iron skillet about 1 inch apart
Once all the biscuits are used, place remaining pepperoni slices and cheese cubes between balls (can grate the cheese if you prefer)
Optional:
Brush with garlic butter and sprinkle with Italian seasoning
Bake for 20 minutes at 350 degrees
Remove from oven, top with Parmesan cheese and bake 10 more minutes or until biscuits are done
Serve immediately with warm pizza or pasta sauce for dipping
