Roasted Potatoes

These Roasted Potatoes are one of our favorite side dishes. Our family loves them!  We have served them to other people and THEY love them.  I found the recipe on the back of an onion soup mix box.  The picture looked good so I decided to try it….that was about TWENTY years ago…I’ve been making them ever since.

We almost ALWAYS have them when we cook on the grill, but they are great no matter what they’re served with.  Some like them with ketchup, some with BBQ sauce, my husband likes a little hot sauce on his…I like them just the way they are.

There are only two ingredients needed, besides potatoes.  The prep time is minimal but they do require about 45 minutes to cook.

 Onion Soup Mix and Oil – That’s It!

I LOVE recipes that are simple and use things I have on hand!  I use generic soup mix and whatever canola oil happens to be on sale.  The recipe “sizes” well…make more or less depending on how much you need.  I usually make about one medium potato per person then “one for the pot”.  (An extra just to make sure you have enough)

Here’s the Recipe:

Preheat oven to 450 degrees

5-6 medium potatoes

1 envelope dry onion soup mix

1/4 cup oil

Wash potatoes thoroughly –  DO NOT PEEL

Cut potatoes into medium size chunks.

In a large bowl mix soup mix and oil.  Add potatoes and stir until coated.

*Adjust oil and soup mix if using more potatoes

Place potatoes in a single layer on a baking sheet or jelly roll pan.  It’s important to keep them in a single layer so they get crispy.

Bake at 450 for about 45 minutes.  Check after about 30 minutes.  To check for “doneness” stick  with the tip of a knife.  If the potato is soft all the way through..they’re done.

If you are grilling, these can be cooked on the grill so you don’t have to heat up the house. They do need to be cooked on the TOP rack of the grill, with the lid CLOSED….NOT over direct heat….best done with a gas grill. They take about the same length of time to cook.

    We have done these potatoes too! Very good! They seem to go well as a side dish with so many meals.

    We make these potatoes too! So yummy!!! I never thought about throwing them on the grill. Brilliant idea! 🙂
