White Chocolate Berry Lasagna
This post was inspired by this awesome personalized lasagna pan from Personal Creations. As always, the recipe and opinions are all my own.
Anyone know what day it is…. BESIDES the day before my daughter’s wedding? It’s National Lasagna Day! You know how much I love a good “National Food Day”…. so today I’m sharing a wonderful recipe for White Chocolate Berry Lasagna, a wonderful no-bake dessert lasagna.
With summer in full swing fresh berries are everywhere…and on sale! We’ve been enjoying them for weeks now. This White Chocolate Berry Lasagna is the perfect recipe for an easy dessert for family or friends. You don’t have to heat up the house making it and it’s cool and refreshing on a hot summer day.
Oh, and the pan! Loving the new lasagna pan!!!! It’s functional and beautiful, not to mention if you take it to a pot luck no one can mistake it for theirs. I can’t tell you how many times I’ve wondered if I’m coming home with the right pan. There’s no worry of the letters washing off in the dishwasher either. They’re etched right into the pan! Don’t need a lasagna pan? That’s Ok, Personal Creations has TONS of other great items! You know what these would be perfect for? Wedding Gifts…but then again, I may have a little too much “wedding” on the brain. LOL!
Here’s the Recipe:
CRUST:
- 36 Golden Oreo cookies (the whole bag)
- 6 Tbsp butter – melted
CREAM CHEESE LAYER:
- 8 oz cream cheese – softened
- 1/2 cup melted butter
- 1 cup powdered sugar
- 1 1/4 cup Cool Whip
- 1- 1 1/2 cups fresh blueberries
PUDDING LAYER:
- TWO – 3 oz packages White Chocolate Instant Pudding mix
- 3 cups cold milk
- 2 oz freeze dried strawberries (found in the product section)
TOPPING:
- 1 1/2 cups Cool Whip
- White chocolate bar or white chocolate chips
*Freeze dried strawberries – NOT the same as regular dried fruit. These have been dried through a freezing process that removes the water to they are hard and will grind into a powder in the food processor. They are typically found on a rack in or near the produce section. They may also be found in the organic or health food aisle.*
Making the Crust:
In the food processor, grind the Oreo cookies (filling included) into fine crumbs
In a medium bowl, mix crumbs with melted butter
Dump into lasagna pan (or 9×13) and press into bottom to form crust
Place into the refrigerator to set while making filling
Prepare Cream Cheese Layer:
Using a hand mixer, combine softened butter and cream cheese with powdered sugar
Add Cool Whip and beat just until combined
Fold in blueberries
Spread mixture over crust
Making Pudding Layer:
Add strawberries to bowl of food processor and pulse until berries become a fine powder
In a large bowl add milk and both boxes of pudding mix
Whisk until pudding starts to thicken then add powdered strawberries and whisk until combined
Spread evenly over cream cheese layer
Refrigerate a few minutes to set before adding topping
Topping:
Spread Cool Whip evenly over lasagna and top with white chocolate shavings or chips
Refrigerate 3-4 hours before serving
