Caramel Apple Cider
This is quite possibly my favorite “Holiday” drink! It’s super easy and DELICIOUS! It tastes just like Apple Pie.
We first made Caramel Apple Cider when my in-laws were visiting at Christmas. I had totally forgotten about it until my mother-in-law called the other day to ask me a question about it. I couldn’t even find the recipe; thankfully, she had a copy. Now that it’s on the blog, I’ll always know where to find it. I love having and “online cookbook”!
The recipe calls for only four cups of apple juice; I doubled it which used the whole bottle. We had some friends here and I thought we might drink it all but we didn’t. I wasn’t sure if it would be good reheated but since it was too good to throw away, I put what was left back in the apple juice bottle and stored it in the frig. Later when my husband came home I reheated it on the stove and it was just as good the second time.
Since the recipe calls for heavy cream I figured I would just get a larger carton so I could have enough to make my own whipped cream. Ready made would be fine, too.
Here’s the Recipe:
- 1/3 cup light brown sugar
- 1/3 cup heavy whipping cream
- 1 tsp. vanilla
- 4 cups apple cider or apple juice (I used Mott’s apple juice. I often use “generics” but for this recipe I recommend a higher quality juice)
In a large sauce pan, over medium heat, stir together sugar and cream
***The first time we made this we were a little concerned about the heat and heavy cream. We followed the directions anyway and sure enough…it turned out fine.
Cook, stirring constantly, about 2 minutes or until bubbly.
***MIne took a bit longer, my stove top heats up slowly***
**Even though you may be temped to turn up the heat….DON’T…it will scorch the cream**
Stir in vanilla and apple juice.
Cook (still on medium) about 10 minutes or until heated through
I like to serve it in a pretty cup.
Topped with whip cream, a little caramel, and cinnamon
I hope apple juice is on sale this week….I have a feeling we’re going to be having a lot of this!
