Healthy Garlic Bread

Who LOVES Garlic Bread?
I’m raising my hand, jumping up and down and shouting, “ME, ME, ME!” like and over excited first grader sitting in the front row when the teacher asks for a volunteer…and my family is right there with me. Granted, some are jumping, shouting and raising their hands a little less excitedly…not because they don’t love it as much, but because that’s just not their personality…they’re doing all that on the inside.
We have some sort of bread at almost every meal and Garlic Bread is our “go-to” extra for most dinners. It goes with just about everything and it’s a great way to round out a meal. You know, the four food groups and all that…meat, veggie, starch, and grain?
The only “drawback” to Garlic Bread (for some people) is the butter or margarine. A while back I participated in Olive Oil Month and was challenged to replace butter with EVOO in everything. Everything we tried was really good but replacing butter on our Garlic Bread was one of our favorites. Now, we don’t do this every time but it’s great for something different and Olive Oil is more healthy that butter so, I can officially call this “Healthy Garlic Bread”, right?! I probably should have used a really great whole grain bread to make it really healthy, but you get the idea.
The Olive Oil gives the bread a really nice crunch and it’s also great to use if you’re going to toast the bread on the grill.
Here’s the Recipe:
Olive Oil
Your favorite bread for toasting
garlic powder
Slice bread into desired thickness
Brush with Olive Oil on one side
Sprinkle with desired amount of garlic
Broil or cook on the grill until golden brown
