Bacon Spinach Swiss Frittata and Fitbit Flex Giveaway!

Today I’m sharing a great breakfast recipe…. Bacon Spinach Swiss Frittata.
We’ve been exercising several times a week since early summer. After the holidays, we decided to be more conscious of what we’re eating. One of the things we’re trying to do is eat more protein. I know protein is important for building muscle and the older I get the more I’m realizing how important that is. Every time I talk to one of the trainers at the gym or my doctor they stress increasing my protein.
To get an idea how well we were doing, my husband, daughter and I started tracking what we ate. We quickly realized we weren’t getting NEARLY as much protein as we thought. On top of that, most was in the evening, when we are less active. This was leaving our mornings lacking in the nutrient most likely to keep us full. Many experts are now recommending 25-30 grams of protein before noon. That’s what prompted the making of Bacon Spinach Swiss Frittata! Each serving contains 12 grams of protein.
Adding an 8 ounce glass of milk is an easy and delicious way to add protein to any meal or snack. Pairing a glass of milk with a serving of Bacon Spinach Swiss Frittata takes the protein in this easy breakfast to a whopping 20 grams!
Apple slices with an 8 ounce glass of chocolate milk (which is ALWAYS a treat!) make the perfect mid-morning snack to round out the My Morning Protein to 28 grams!

Here’s the Recipe:
- 4 slices bacon
- 2 cups fresh spinach
- 1/2 cup Swiss cheese – grated
- 10 eggs
- 1/2 cup milk
- salt and pepper to taste
Preheat oven to 350 degrees
Wash and roughly chop spinach
Set aside
In a large bowl, whisk together eggs, milk, salt and pepper – set aside
Heat a medium oven proof skillet (I used cast iron) over medium high heat
Add bacon and cook until slightly crisp
Remove bacon and drain on paper towel
Leave about 1 tablespoon of bacon grease in pan, draining the rest
Add spinach to skillet over medium heat and stir just until wilted
Crumble bacon and add to skillet
Give the eggs and milk another whisk and add to skillet
Make sure spinach and bacon are evenly distributed in skillet
Top eggs with Swiss cheese and allow skillet to sit on burner over medium heat for 4 minutes
This allows the bottom and edges to form a “crust”
Place skillet into preheated oven and bake about 10-12 minutes or until center is done and frittata doesn’t jiggle when shaken
Serve immediately or
Save For Later:
Once Frittata is done cool completely, remove from skillet. (Never store in a cast iron skillet as the eggs will take on an “irony” taste) Cut into 8 pieces, wrap in plastic wrap or store in airtight container in refrigerator until ready to serve. When ready to serve, remove from plastic wrap and microwave 20-30 seconds
