Southern Favorites #5 – Country Style Steak
Country Style Steak is THE meal we could always count on having at Grandma Vivian’s house. (My husband’s grandmother) Even though I would make it at home and so did my mother-in-law, it was still a “treat” when Grandma Vivian made it. Her’s was the best. She usually had it in the oven right after breakfast, sometimes before. It would cook for a good while and the anticipation of eating it built as the aroma filled the house.
It’s just about as “Southern” as it gets. Cube steak smothered in gravy, always served with rice and homemade biscuits, so you can eat extra gravy (although, our family has come to realize, we may enjoy gravy more than most people). We don’t eat it every day, and we know it’s not a “health” food, but when we DO eat it, we LOVE it!
This is a great “busy day” meal. By that I mean, it’s a great crock pot meal if you are going to be away most of the day or you can also put it in the oven and “forget” it for a couple of hours.

Here’s the Recipe:

- Cube Steak – at least 1 piece per person
- Season Salt
- Pepper
- flour
- oil
- onion soup mix
- water
Heat about 1/2 cup oil in a large skillet over high heat
Sprinkle both side of meat with season salt
Generously sprinkle both sides with pepper
Dredge in flour
When oil is hot place steak in skillet to brown
After browning 2-3 minutes, turn to brown opposite side
Reduce heat
Remove meat from skillet and place in crock pot
More oil may need to be added.
Sprinkle about 1/4 to 1/2 cup (depending on how much oil you have) flour into oil (you can use the flour the meat was dredged in)
Cook, stirring constantly, about 1 minute. Make sure it’s not burning and turn down the heat
Continue stirring constantly and add water. It will get very thick right away, keep stirring.
Add enough water so that it looks like “thin” gravy
To have water close when I need it, I fill my tea kettle before starting. (I don’t heat the water, though)
Pour over steak in crock pot. If needed, add a little more water so steak is almost covered.
Add dry onion soup mix. For a “full” crock pot I use two packets.
Cover and cook on low heat 5 hours (or on high for 3 hours or so). If it gets done early, I just turn it on the “keep warm” setting and it stays until we are ready to eat.
If you are cooking it in the oven, brown meat in a dutch oven. Remove and make gravy as shown. Return and add water and onion soup mix. Cook on 350 degrees for 2 hours (or so). Can also turn temperature down to 250 or 300 and increase cooking time.
It may not be healthy…but it sure it good!
