Chocolate Dipped Meringue Cookies
I love “seasonal” and holiday foods! You know, chili on a cold Winter evening, hamburgers from the grill on a Summer afternoon, a cup of hot apple cider on a crisp Fall morning, and these Springtime Chocolate Dipped Meringue Cookies. They are light and airy with a delicate texture, just like a gentle Spring breeze. Ok, so here in Texas we don’t really get “gentle” breezes, but a girl can dream, right? I’m sure some of you will know what I’m talking about.
I made these cookies a couple of days ago and my family has really been enjoying them. My son thought adding a little peppermint would make them like the soft mints he loves to grab on the way out of his favorite restaurant. My daughter and her friend proclaimed them “addictive”. So be warned, you may not be able to eat just one. Just in case that happens, my husband has some great logic concerning these. Feel free to “rationalize” if needed. He says…
They are made of Meringue
Meringue is mostly air
Air has no calories
Therefore, these must have little to no calories!
Whatever the case may be, they are good.
They mix up pretty quickly but need to stay in the oven overnight, so a little planning is required. The good news is, you wake up to fresh cookies in the oven the next morning. It’s almost like having the “cookie fairy” come and leave cookies while you’re sleeping! Wouldn’t that be WONDERFUL?!
