Today, I’m sharing a quick, easy and festive Bacon Breakfast Ring recipe, because breakfast is often the “overlooked” holiday meal.

The holidays are upon us!  Yeah!!! I love the holiday season!  Besides the “official” holidays, my mom and I have birthdays in early December, so we tend to start celebrating the week of Thanksgiving and continue right on through the New Year. 

Like most families, we enjoy getting together and celebrating with family traditions.  One of our favorite traditions is having a big family breakfast….as long as it’s not too early.  However, during the holidays I often get so busy thinking and planning dinners I completely forget about breakfast.  It just gets overlooked…until it’s too late.  This year, I’m hoping to avoid that with some new time-saving ideas and recipes.

One of our favorite breakfast foods is….bacon, of course!  It’s always a HUGE hit, but it can take a good long time to prepare enough for everyone.  A while back I realized the easiest (and least messy) way to prepare bacon is in the oven.  But this year I also realized something else…. 

Bacon can be cooked ahead and frozen! 

This is one of those things I shake my head and wonder why in the world I haven’t done it before.  This holiday season I’m preparing  early.

My first stop was HEB to pick up Wright® Brand Bacon, our family’s favorite!  We love the nice thick slices and how it cooks up perfectly every time, probably because it’s hand trimmed, hand selected and naturally smoked.  The great prices at HEB are always a winner!

I’m planning to make the Bacon Breakfast Ring but I know we’ll want extra for other mornings.  And you know, everything’s better with bacon….so I’m making plenty.

Bacon in the oven is SUPER easy….

Cover a baking sheet (with sides) with parchment paper.

Place bacon side by side, close but not touching.  Cover with a second sheet of parchment paper (to cut down on the mess) and bake at 400 degrees for about 15 minutes.

Once the bacon is fully cooked, place it on a paper towel to drain.  When it’s cool, place in a freezer bag (keeping as flat as possible) and freeze until ready to use.  When ready to use just take out what’s needed and microwave a few seconds to reheat.

Having the bacon prepared ahead makes this Bacon Breakfast Ring super quick and easy to prepare.  It really is delicious!  I’ll just warn you now….everyone’s going to love it so just go ahead and plan to make two!

Here’s the Recipe:    

  • 1 tube (8 count) crescent roll dough
  • 8 slices Wright® Brand Bacon – cooked
  • 5 eggs
  • 1 cup Cheddar-Jack cheese 
  • salt and pepper to taste
  • parchment paper
  • Optional: 1 egg for egg wash and salsa for dipping

Preheat oven to 375 degrees

Line cookie sheet or other large baking pan with parchment paper

Scramble (5) eggs in a skillet over med-high heat, adding salt and pepper to taste

Remove from pan and set aside

Separate crescent rolls and arrange in a “star” shape overlapping corners slightly

Top each roll with 1 slice of Wright® Brand Bacon

*My bacon was longer than the crescent rolls so I broke off the extra and added it around the center of the circle

Sprinkle 1/2 cup cheese around center

Top evenly with scrambled eggs

Add remaining cheese

Carefully fold crescent and Wright® Brand Bacon to the center of the circle

Tuck slightly and press gently so end remains in place

If desired, whisk remaining egg and brush top of ring with it (this gives it a beautiful golden brown color)

Bake at 375 for about 12-15 minutes, checking after 12

Carefully removed from baking sheet and serve

For a little taste of “Texas” serve with your favorite salsa or hot sauce
