Breakfast Potatoes
Breakfast Potatoes aka Southern Style Hash Browns or Home Fries
Several years ago, in an attempt to get our day going, our family began gathering at the breakfast table at 7:30 a.m. on weekday mornings. Some “enjoy” this more than others. We have some people who love breakfast early and some who just “watch” while the rest of us eat. Because it is early, it’s usually cereal or sometimes other simple things…like Cinnamon Toast or Sticky Buns. For everyone in our family to really enjoy breakfast, it has to be served around 10:00 a.m. (or later) and include bacon, eggs, grits, Homemade Biscuits, Breakfast Gravy, sometimes pancakes, and these Breakfast Potatoes. To make cooking the potatoes easier and faster, I started by “baking” the potatoes in the crock pot the day before.
Here’s the Recipe:
- Potatoes – about 1 small to medium per person
- 1/4 small onion – chopped in small pieces
- oil – enough to cover the bottom of skillet
- Seasoned Salt – to taste
*I cooked the potatoes in the crock pot first. These can be made with uncooked potatoes but the cooking time is longer.
Without peeling, cut potatoes into small pieces
Heat oil in skillet and add onion
Saute over medium heat until translucent or slightly browning on edges
Add potatoes to oil and fry until golden brown, stirring often
Drain on a paper towel
Add Seasoned Salt to taste

Love breakfast potatoes. I usually cook my cubed potatoes in the microwave for about 5 minutes and then add to a hot cast iron skillet. These look yummy!!

Danita, I absolutely LOVE breakfast potatoes, and I love the kick that seasoned salt (or Tony’s) gives them after they come out of the pan. Mmm. So delicious!
My favorite breakfast food is pancakes. I hardly make them anymore, but whenever I’m having a rough day or a rough week, that’s what I crave at the breakfast table on the weekend.
