Chorizo Quesadillas
Some of you may be asking, “What is Chorizo?” It’s a slightly spicy Mexican pork sausage, originating in Spain but enjoyed in many Latin American countries. The flavor varies slightly by country due to availability of spices.
Here in Texas we have “Mexican” Chorizo. It comes uncooked in a casing like many other types of sausages, but in Florida the Chorizo is “Cuban” and comes smoked so it is more like a beef or pepperoni log. Both have a wonderful flavor and can be used in a variety of recipes…like Bolichi, a traditional stuffed roast.
Chorizo can be substituted or mixed with ground beef in any Mexican dish. We prefer mixing it and like it in tacos, nachos, and enchiladas, but for these Chorizo Quesadillas I didn’t use any beef.
Here’s the Recipe:
- Chorizo – 1 link
- 6-7″ flour tortillas – about 4
- 1/2 cup Cheddar Jack cheese
- Optional Topping: salsa, sour cream, jalapeno
*Measurements are approximate -adapt ingredients to individual liking*
Remove sausage from casing and fry until cooked through, set aside
**Unlike hamburger it doesn’t change color much when cooking. It cooks quickly, probably in about 5 minutes**
It tends to be less fatty than hamburger so no need to drain
Butter one side of each tortilla
Heat a large skillet over high heat
*I have a special flat cast iron skillet that I use. We call it the “Tortilla Pan” because it’s only used for heating tortillas and making quesadillas*
Place 1 tortilla, butter side down, on skillet
Sprinkle about 2 tablespoons of cheese on half the tortilla
*The tortilla will be folded so make sure you only put it on half*
Top with desired amount of Chorizo
*Keep a close watch on the skillet to make sure it doesn’t get too hot. Reduce heat if necessary*
Fold other side of tortilla onto cheese and Chorizo
Allow a few seconds to melt cheese, then flip
Continue to grill tortilla until golden brown on both sides
Cut in half to form “triangles”
Serve with salsa…I used Salsa in a Snap

I really enjoy chorizo. We had chorizo and eggs for breakfast this morning in fact. I like how you added it a quesadilla. Yum
