Mrs. Fisher’s Carrot Cake
Mrs. Fisher’s Carrot Cake is honestly THE BEST carrot cake I’ve ever eaten! It might be in part because the decadent cream cheese frosting is almost as thick as the cake!?
I got this recipe from….well, Mrs. Fisher….obviously. Mrs. Fisher is a sweet lady we know in Pennsylvania. Actually, she’s my husband’s-brother’s- wife’s-mother aka my in-law’s, in law….or something like that.
Whatever the case, she is known for her carrot cake. It is her go-to dessert for family dinners and church potlucks. When we moved away we knew this would be one of the things we missed most. We are thankful she was gracious enough to share this yummy recipe with us.
I can be made in round cake pans but she (and we) just make it in a 9 x 13. It’s one of the easiest homemade cakes I’ve made. My daughter made this one for church around Easter and it was a huge hit.
Here’s the Recipe:
- 4 eggs, well beaten
- 2 cups all-purpose flour
- 3 tsp ground cinnamon
- 1 1/2 cup oil (I use canola)
- 1 tsp salt
- 2 cups sugar
- 2 tsp baking soda
- 3 cups grated raw carrots (about 8-10)
- Optional: 1 cup chopped pecans
*Pecans can go in cake batter only, frosting only or in both
Preheat oven to 350 degrees
Spray two 8″ round or one 9×13 pan with non stick cooking spray
Grate carrots
Sift together flour, cinnamon, baking soda, salt and sugar in the large bowl of electric mixer
Add eggs and oil and mix well
Stir in grated carrots
Pour batter into prepared pan and bake for about 30 minutes or until toothpick comes out clean when inserted into center
Top with cream cheese frosting and carrot twists
