New Potato Nachos
Our family enjoys new potatoes (also called red skin potatoes) but they can be a little expensive so I don’t buy them often. When I do, it seems we always have a few left. Sometimes people in our family don’t enjoy leftovers as much as the “original” meal but I hate to see food go to waste. So, I try to come up with new ways to use the bits and pieces of previous meals.
The easiest is Leftover Soup, but some things are just too good for the soup pot….new potatoes are one of them.
Going back to my favorite dinner motto….“When in doubt, smother with cheese and bacon”…I decided to make New Potato Nachos. These are really like a little mini loaded baked potato! I’ve seen similar recipes floating around Pinterest and they looked great. I chose to call them “nachos” because….well, I love Mexican food and anything on a baking sheet, covered with cheese and topped with whatever you choose I like to call “nachos”.
You don’t have to make them with leftover potatoes but it will take considerably longer. These are a tasty addition to any meal (especially on leftover night), perfect appetizer or quick and easy lunch.
Here’s the Recipe:
Exact measurements not given because you can make as few or as many as you like.
- boiled new potatoes (small red skin)
- bacon – fried and crumbles
- cheese – cheddar or cheddar Jack
- salt and pepper to taste
- Optional: sour cream, chives
Preheat over to 375 degrees
Place potatoes on baking sheet
Using fork, smash potatoes to open up and slightly flatten
Cover with desired amount of cheese
Top with bacon
Place in preheated oven until cheese is melted and bubbly
Sprinkle with salt and pepper to taste
