No-Bake Cookies
We were “iced” in for almost four days and I must say…I really enjoyed the time at home. Now that it has gotten cold (it was almost 80 degrees here the day before it started to ice) we are “officially” in the Christmas spirit. While we’ve been home we have watched Christmas movies, decorated the Christmas tree and baked Christmas cookies.
These No Bake Cookies were requested by my son. They are super easy, only take a couple of minutes to make and best of all…they’re delicious. I do not like peanut butter, but I really like these cookies. I found it a little difficult to get good pictures because they aren’t a real attractive cookie but they do taste great. In fact, as I went to get out a few today for better pictures, I realized they’re almost GONE! When my daughter saw there were only a few left she immediately suggested that we might need to make more. Considering we have about five tins of cookies I think we’ll be OK.
Here’s the Recipe:

- 1/2 cup margarine
- 4 tablespoons cocoa
- 2 cups sugar
- 1/2 cup milk
- 1/2 cup peanut butter
- 3 cups quick oats
- 1/4 teaspoon vanilla
- pinch of salt
First, prepare a space to put the cookies when done (using waxed paper). I covered the end of our kitchen table with a table cloth then put waxed paper on top of cloth
Measure oats, peanut butter, and vanilla – set aside
In a medium saucepan combine margarine, cocoa, sugar and milk over medium heat.
Bring mixture to a boil, and boil for 1 minute
Remove from heat and stir in oats, vanilla, salt, and peanut butter
Drop by spoonfuls on prepared waxed paper
Allow to “harden” and store in airtight containers with waxed paper separating layers of cookies
**I think the weather affected the “hardening” of our cookies. It was very damp so it took longer than usual for them to firm up.**

- The "batter" is very hot when cookies are dropped onto waxed paper. I covered the end of my table with a folded table cloth then placed the waxed paper on it.

I have to admit, I’ve never made no-bake cookies before! Am I weird? These look absolutely delicious and I love that my kids would be able to help me make them! They sound simple and awesome! Thanks for sharing at Saturday Night Fever – pinning now!
