I’m sure you’ve noticed I haven’t been talking food and recipes much lately. I hope you haven’t grown weary of all the wedding planning posts …it’s just what’s consuming our time and thoughts right now.
Generally, I blog what I’ve cooked recently and today is no different. What have we been having? Well, it’s needed to be something quick and easy I can grab out of the freezer….
Enter our go-to-everyone-loves meal……Freschetta Pizza Canadian Bacon & Pineapple along with Brickoven Pepperoni!
I usually stock up the freezer with Freschetta from Walmart. Having plenty on hand makes a quick and easy meal for the kids (when my husband and I go out) or when we’ve had a busy day and no time to cook.
Thankfully, “frozen” pizza is a treat for our family and Freschetta is one we really enjoy! It’s made with high quality ingredients like 100% REAL Provolone and Mozzarella, naturally rising crust (no chemicals) and sauce made with 3 sun-ripened tomatoes. It makes me feel good about what I’m serving my family.
Now, we could just fill up on pizza, but it’s nice to round out a meal with a veggie or salad. This week there was so much luscious fresh fruit on sale, Orange Vanilla Glazed Fruit Salad seemed the perfect pairing.
I love the beauty this colorful salad brings to the table! The glaze is so simple and can be made the day before…in fact, it’s best to do so because it needs to cool completely before pouring over fruit. Since there’s no bananas or apples to turn brown, Orange Vanilla Glazed Fruit Salad stays good in the refrigerator a couple of days.
The recipe makes a HUGE quantity so it’s perfect for pot lucks, picnics or an upcoming July 4th celebration with family and friends. I didn’t need quite that much so I only made half. My family LOVED it! They ate all that I made and asked for more.
Here’s the Recipe:
Glaze:
- 1 cup sugar
- 1 cup water
- 1 orange
- 2 tsp vanilla
Fruit:
- 4 pints strawberries
- 2 pints blueberries
- 2 cups red grapes
- 2 cups green grapes
Optional:
- Mint leaves to garnish
Zest orange
How to:
- Wash orange thoroughly
- Use grater to gently scrape the top layer of peel off the orange (be careful NOT to go too deep, you only want the “orange” part, NOT the white underneath)
Squeeze the juice from orange into a small pot
Add all glaze ingredients into small sauce pan and bring to boil over medium-high heat
Reduce heat to low and allow to simmer 15-20 minutes or until mixture thickens a bit
*It may not seem to be thickening. Take it off after the time stated, it will thicken more as it cools*
Remove from heat and chill (needs to be completely cool before using)
When syrup is ready, cut strawberries in thick slices and cut grapes in half
Place all fruit in a large bowl and pour over about half the syrup
Toss gently to coat completely
Drizzle remaining syrup over fruit and keep in refrigerator until ready to serve
Garnish with mint leaves just before serving
