Peanut Butter Brownie Cups

My daughters and I have been baking up a storm! It’s one of our Christmas traditions. We have tried-and-true family favorites that we always make like Russian Tea Cakes and sugar cookies. My birthday is just a couple of weeks before Christmas and this year I was fortunate enough to have TWO birthday cakes, Snicker Cake and Boston Cream Pie. Then, 5 batches of Snickerdoodles were baked as gifts. But along with all those wonderful old favorites we decided to try something new, for the peanut butter lover’s in the family….. Peanut Butter Brownie Cups.
They combine the classic tastes of chocolate and peanut butter and are exactly what the name implies, a homemade brownie cup filled with peanut butter.

The brownie cups were very easy to make and NO mixer required, so less dishes and easy clean up! They bake in only about fifteen minutes. When they come out of the oven the top is “crusty” but the center is hollow. Using a spoon to break that crust gives you the perfect little “cubby” to fill with peanut butter. As an added garnish I sprinkled with mini chocolate chips and butterscotch chips. Peanut butter chips could be used or chopped peanut butter chocolate cup candies would be good.
The recipe only makes 12 so if you are having a bigger crowd (or you just anticipate loving them) I’d recommend making 2 batches. It wouldn’t take but a couple of extra minutes. We took them to church for our fellowship lunch and they were a big hit!
Here’s the Recipe:
- 3/4 cup sugar
- 1/4 cup butter, softened
- 1 Tbsp water
- 1 3/4 cup chocolate chips – divided
- 1 large egg
- 1/2 tsp vanilla
- 1 cup all-purpose flour
- 1/4 tsp baking soda
- 3/4 cup SKIPPY® Natural Peanut Butter
- Optional Garnish:
- butterscotch chips
- mini chocolate chips
- peanut butter chips
- chopped peanut butter cup candies
Preheat oven to 350 degrees
Spray or grease 12 muffin cup pan
Combine sugar, butter and water in a medium microwave-safe bowl
Microwave on high about 45 seconds or until butter melts
Mix well
Add 3/4 cup chocolate chips and stir until smooth
*You may be tempted to microwave again but you won’t need to. It doesn’t take much to melt the chocolate
Stir in egg and vanilla until well mixed
Add flour and baking soda and stir until combined
Allow the batter to sit for a couple of minutes to come to room temp
Add remaining 1 cup chocolate chips and stir until evenly distributed (if batter is too warm they will also melt so let it cool, it doesn’t take long)
Divide batter evenly between muffin tins
Bake 13-15 minutes or until tops are set and toothpick inserted in center comes out slightly wet.
Remove from oven and allow centers to fall. If they don’t (mine didn’t) gently push the tops with the back of a spoon to make a hole for the peanut butter
In a small microwave-safe bowl, heat peanut butter for about 30 seconds
Remove and stir until smooth
While brownies are still warm, fill centers with melted peanut butter
Feel free to use more peanut butter if you like it to come all the way to the top
Top with any desired garnish and cool completely in pan

These are delicious! Oh the possibilities. You could fill these with all kinds of amazing things, but the peanut butter was awesome!
