Pork Kabobs with Pineapple and Fire Roasted Tomato

Grilling is one of our favorite ways to cook, especially in the summer. Usually, it’s chicken or burgers and an assortment of spices but a few weekends ago we decided to try something different….Pork Kabobs with Pineapple and Fire Roasted Tomato.
We do love to experiment with flavors and spices but for this recipe I used Smithfield® Marinated Fresh Pork from Walmart. We’ve always enjoyed Smithfield’s® fresh tenderloin and now they have several new flavors. For our kabobs I chose the Garlic and Herb Pork Sirloin.
Because it was trimmed nice and lean and marinated to perfection, my dinner preparations were quick and easy. These kabobs made a wonderful family dinner but would also be great for guests. Add a handful of colorful garnish for a beautiful presentation. Kabobs allow everything to cook quickly while keeping the pork tender and juicy. Quick and easy cooking (and prep) means more time with family and friends! WIN! WIN!
Also, this is a very filling, low-fat, low carb meal using lots of fresh summer ingredients. Pineapple pairs well with any pork but the flavors of this Garlic & Herb Pork Sirloin married well with the sweetness of the pineapple as well as the tomatoes. The tomatoes will probably get a little more char on them that the other ingredients but that’s what makes them “fire roasted”.
Here’s the Recipe:
- Smithfield® Garlic & Herb Pork Sirloin
- Fresh pineapple chunks (I used about 1/2 of the pineapple)
- Cherry tomatoes
- Onion slices
- Skewers (I use wooden)
- Optional Toppings:
- Romaine lettuce leaves
- Chopped peanuts
- Cilantro
- Cucumber – diced small
At least 30 minutes before grilling, soak wooden skewers in water
*This helps prevent them from catching fire while grilling*
Prepare ingredients by cutting up fresh pineapple, onions and Garlic & Herb Pork Sirloin
*Try to cut them in about the same size chunks. This allows the cooking time to be about the same for everything*
Alternating meat, fruit and veggies, thread ingredients onto skewers, leaving room at each end
*This recipe makes about 8-10 skewers*
Grill for about 10-15 minutes (or until meat is completely done) over direct heat
Optional Ingredients:
While kabobs are cooking (unless you’re the one cooking them) prepare garnish ingredients
Wash lettuce leaves and chop peanuts, cucumbers and cilantro
Remove from grill and place each skewer on prepared lettuce leaf
Top with garnish or serve them on the side
Serve Immediately
