Pot Roast Soup

Feeding a family on a budget is not always an easy thing to do. I’m always watching for sales and looking for recipes that taste great but are still budget friendly. We eat a lot of chicken, it’s economical and versatile but our family loves a good old fashion pot roast with potatoes and carrots! Unfortunately, roast can be expensive and now that our children are all older, we can eat a lot of it. 

Recently, I found one of my favorite cuts of meat, London Broil, on the clearance rack at my local grocery store. It wasn’t big enough to feed our family of five as a main dish, but it was perfect for this hearty Pot Roast Soup. Paired with crackers and good bread it made a wonderful, inexpensive dinner on a cold day. Everyone was quite full and we even had a little left over for my “soup loving son” to have for lunch the next day.  

Here’s the Recipe:

 Ingredients listed for about 6 servings

  • 1-2 lb roast (I used London Broil but any cut will work)
  • 4-5 small to medium potatoes
  • 1 cup baby carrots
  • 1 carton beef broth
  • 1 can diced tomatoes (undrained)
  • 1/2 small onion – cut in large slices
  • 1/2 teaspoon minced garlic
  • 1/4 tsp pepper ( or to taste)
  • salt to taste
  • dash of Worcestershire sauce 

 Cut meat and potatoes into bites sized pieces

Carrots can be cut or left whole

Add all ingredients to a large stock pot

Bring to a boil, cover and simmer at least 1 hour or until carrots and potatoes are done

**I usually cook it for about 2 hours.  The longer it cooks the better it will be**

Can also be done in the crock pot – cook 4-5 hrs on high or 6-8 on low
