Quick Soaking Dried Beans
Dried beans are an excellent source of fiber and protein. They’re economical and versatile. The only drawback….they need to be soaked several hours before cooking, best done overnight. It’s a simple step that requires little effort but one I have a difficult time remembering.
Today on Time Saving Tuesday, I’m going to share with you a method for quick soaking dried beans that will have them ready to cook in about an hour. I used black-eyed peas but this method works with any dried bean or pea.
First, rinse beans in cool water and discard any bad ones
Place them in a pot and cover with water about 2-3 inches over beans
Bring water and beans to rolling boil and allow to boil 5 minutes, uncovered
Cover, remove from heat and allow to stand 1 hr.
Cook as desired
Tomorrow, we’re cooking these black-eyed peas for our New Year’s dinner!
