This Time Saving Tuesday Peeling Sweet Potatoes is something I learned from a friend several years ago. As with most all of my “Time Saving Tuesday” tips it was one of those, “Why didn’t I think of that sooner” moments!
If you’ve ever tried to peel and cut a sweet potato you know it’s NOT easy. They tend to be as hard as a rock and have a tough peel that leaves sticky droplets all over the peeler, the potato and your hands. I most often use them for Sweet Potato Casserole and since our family usually wants a double batch, that means peeling a lot of potatoes.
Several years ago my friend Eunice and I were making Sweet Potato Casserole for a large group, like 30 or so. As I started to peel a massive pile of potatoes she gave me a strange look and asked why I didn’t cook them first.
The peel on a cooked sweet potato slides right off!
So, anytime you are using sweet potatoes in a dish that requires them to be cooked…
Boil the potatoes in a large pot until done
Drain and allow to cool…very important…they stay hot a LONG time!
Pinch the skin between your finger and thumb and it will peel right off
Any bad spots will come out easily, too!
A large pot can be peeled in about 5 minutes
