Orange Marmalade Pork Loin with Smithfield All Natural Pork

We had a great summer! It was busy and like a revolving door…
oldest daughter (our oldest) left to work all summer at camp, my husband and I took our son and other church kids to camp, middle daughter (our middle daughter) went to North Carolina to camp, my in-laws came for a month, my parents came for a few days, a friend from Florida was in town on business and spent a night with us, then oldest daughter returned home! See what I mean?
Normally, we’re very scheduled but this summer we spent our time relaxing, visiting and enjoying the “chaos”.
But alas, all good things must come to an end.
It’s September and we are getting back into a routine. Homeschooling, piano lessons (giving and taking), karate, and face-painting gigs are just a few of the things on our schedule right now. When my children were small I thought I’d be less busy when they got older….WRONG! I’m just as busy, if not more so. The difference…when they were little, I was busy at home…Now, we’re busy outside our home.
With all the activities going on, we still make it a priority to eat dinner together…almost every night. That means I have to get back into the routine of MAKING dinner….every night…and that means PLANNING!
I start by planning our menu. When I’m really organized I plan and shop for a month at a time….FYI I haven’t done that in a while. Right now, I’m doing about a week at a time.
Thankfully, I really enjoy shopping at my local Tom Thumb! Seriously, I’m there A LOT…like I’m on a first name basis with these people…literally! They’re all so friendly, I just love spending time there. Tom Thumb has a lot of hard to find items, their meat selection is the best around and they have great sales!
When I ask my 13 year old son if he would like to go with me to the grocery store and he says “yes” because it’s Tom Thumb… you KNOW it’s gotta be good!
Tom Thumb makes it easy to save money with the Just4U program. I download coupons from my computer or on my phone and save, save, save. This trip I was shopping for Smithfield All Natural Pork Loin and used this $1 off coupon, added right at the store!
For the Orange Marmalade Pork Loin recipe I chose a nice large Smithfield All Natural Pork Loin because it would serve us for 2 meals…another great way to get back into the routine…Cook Once, Eat Twice!
This was our first time to have Orange Marmalade Pork Loin and my family loved it.
Here’s the Recipe:
Nonstick cooking spray
1 3 1/2 – 4 lb boneless pork loin roast
1/2 cup finely chopped onion
1 12 oz. jar orange mamalade
1 Tbsp honey
1/2 tsp finely shredded lime peel
1 Tbsp fresh lime juice (from the same lime)
2 cloves minced garlic
1 chipotle pepper in adobo sauce, finely chopped
1 tsp ground cumin
1/2 tsp salt
1/2 tsp dried oregano
1/4 tsp black pepper
1/2 cup chicken broth
Lightly spray inside of crockpot with cooking spray
If necessary, trim any extra fat from roast and place in crockpot ( My Smithfield All Natural Pork hardly had any extra!)
In medium bowl, mix together all other ingredients EXCEPT chicken broth
Pour marmalade mixture over roast
Carefully pour broth AROUND roast…you don’t want to wash off the marmalade
Cover and cook on low 5-5 1/2 hrs or high 2 1/2 -3
For first meal…Slice and drizzle with cooking liquid, serve with a starch and veggie
For a super easy second meal…Chop and mix meat with reserved cooking juices and serve on buns!

I’ve seen orange marmalade to make asian chicken meals, but I never thought about it for a pork loin. But I do love cooking one in the slow cooker. They end up so tender and just fall apart!
