Mozzarella Stuffed Chicken Parmesan
Ok, confession….. I scroll Facebook WAYYYY too much. There, I said it. I take comfort in the idea that I may not be the only one. (Anyone else care to admit it?) And that’s where this Mozzarella Stuffed Chicken Parmesan recipe came from.
I love watching those recipe videos and one day, I’m going to learn how to do them. Until then, I decided to put my “scrolling” to good use and make some of the recipes that look so delicious!
This recipe for Mozzarella Stuffed Chicken Parmesan is adapted from Natasha’s Kitchen.
Here’s the Recipe:
- 4 Boneless Skinless Chicken Breasts
- 1/2 cup Italian bread crumbs
- 1/3 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 2 eggs
- 3-4 Tbsp Olive Oil
- 1 Jar of your favorite Marinara Sauce (or make your own)
- 1 1/2 cups shredded Mozzarella cheese (divided)
- Optional: Chopped Parsley for garnish
Also needed:
- 3 shallow bowls or dishes (11 x 7 Pyrex type work well)
- Cast iron or other oven proof skillet
Preheat oven to 400 degrees
Place flour in first shallow bowl
In second bowl, place eggs and beat well with fork
In third bowl, combine bread crumbs and Parmesan cheese
Combine salt, pepper and garlic powder and sprinkle evenly over chicken
On the “thicker” side of the chicken cut a “pocket” in each breasts, making sure not to cut all the way through
Stuff each breast with 2-3 Tbsp of Mozzarella cheese
Add enough oil to skillet to lightly coat the bottom
When oil is hot, take one chicken breast at a time and dredge in flour, coating lightly
Then in egg, allowing extra to drip back into the bowl
Then in bread crumb mixture
Place in hot oil and brown on both sides (about 3 minutes on each side)
Adjust heat as needed in order for oil not to get too hot
*It’s important to make sure oil is hot before placing chicken, otherwise coating will fall off…. sad day!
When chicken is golden brown and crispy, turn off heat and pour over Marinara
Top each piece with remaining cheese and bake uncovered at 400 degrees for 15-20 minutes or until internal temperature reaches 165 degrees.
*Time will depend on thickness of chicken
*Yes, I only made 2… they were huge and only 2 of us for dinner. I still used the whole jar of sauce.
Remove from oven and top with chopped Parsley, if desired
Serve immediately while the cheese inside is ooey-gooey deliciousness!
