Mrs. Fisher’s Cream Cheese Icing
Yesterday, I shared with you Mrs. Fisher’s Carrot Cake…probably THE easiest made from scratch cake you’ll ever make….and THE best Carrot Cake.EVER.
I mentioned that one of the things that makes this cake so yummy is….the icing is almost as thick as the cake. Now before you click away because you don’t like so much icing, just hear me out. My husband is not a big “icing” person but he absolutely LOVES this cake.
I have a great cream cheese icing recipe but for some reason this recipe goes perfectly with this cake so I always make them together.
Here’s the Recipe:
- 1 stick butter – softened
- 1/2 cup shortening
- 8 oz cream cheese – softened
- 1 box (16 oz) powdered sugar
- dash of salt
- 1 tsp vanilla
- Optional:
- 1 cup chopped pecans or walnuts
Cream butter, shortening and cream cheese in bowl of electric mixer
Add sugar and beat well
Add vanilla and mix well
If icing seems too stiff, add milk one teaspoon at a time and mix well until reaches desired consistency
Optional: Stir in nuts
Spread over Mrs. Fisher’s Carrot Cake
We omitted nuts from icing and just sprinkled them on top.
