Individual Apple Berry Cobbler
It just wouldn’t be right to have a week without a dessert post! This week it’s Individual Apple Berry Cobbler.
My husband and middle daughter LOVE pies and cobblers, my son and I like them and although our oldest daughter doesn’t eat them she really enjoys making them. I’m pretty sure I’ve mentioned before in my other pie posts, I DO NOT make homemade pie crust. For some unknown reason I just haven’t been successful at it. Here’s the story of my first attempt at “pie crust”.
Shortly after my husband and I were married he mentioned to me how much he LOVED cobbler….specifically blackberry. Excited about the possibility of making something he would really enjoy, and since it was summer fresh fruit was readily available, I decided to make him one. Now, until this point I had never made a cobbler…of any kind….so I called his mom. She explained the process and I understood all the steps. It sounded easy enough and I felt pretty confident that I could do it.
The next day, he went to work and I decided I would surprise him with this wonderful, freshly baked, homemade blackberry cobbler. I had already purchased everything needed, so I got to work. I followed (exactly) my mother-in-law’s step by step instructions but SOME HOW I managed to mess it up! I mean REALLY mess it up. The dough in the cobbler didn’t bake correctly so it was VERY chewy. (Just in case you’ve never had cobbler….it’s not supposed to be chewy!) The filling was horribly “soupy”…like it would have made better pancake syrup than cobbler filling.
If I did a round up of my “Top Five Epic Fails of a LIFETIME”…blackberry cobbler would easily be NUMBER 1!!!!
Fast forward fifteen or so years….
We’re big fans of King Arthur products and one day while looking through a catalog, my husband saw a recipe for Individual Cobblers. Since I hadn’t attempted a cobbler is about fifteen years, he was really wanting one! I looked at the recipe and realized the topping was similar to biscuit dough….which I CAN make.
We purchased the Individual Pie Dishes from King Arthur, but you could make them in any small oven safe dish. It’s fun to have your own “personal” pie, eat right out of the dish, and the recipe is easily adjusted in order to make a smaller amount.
Here’s the Recipe 4-5 servings:
Filling:
1 Tbsp corn starch
1/3 cup sugar
1 medium apple – cored, peeled and diced
1 1/4 cup blackberries
1 cup blueberries
1 squirt lemon juice
Topping:
1 1/2 cup all purpose flour (White Lily)
3/8 tsp salt
1 1/2 tsp baking powder
1/3 cup milk
1/3 cup butter
Preheat oven to 375 degrees
Prepare Individual baking dishes by spraying with non-stick cooking spray
In a large bowl, mix sugar, cornstarch and berries
Add lemon juice and stir again
Divide among prepared dishes
In another medium-large bowl, combine flour, salt and baking powder and mix well
Cut butter into small pats and add to flour
Using a fork (or your hand, which works better) Cut butter into flour
Add milk and stir until moistened
Place baking dishes on a baking sheet…they may overflow
Spoon nickle sized spoonfuls of topping on fruit until fully covered
Bake for 25-30 minutes or until topping is done
These will be EXTREMELY hot when they come out of the oven. Allow to cool a couple of minutes. Serve on a small plate.
Best when topped with a VERY LARGE scoop of Blue Bell Homemade Vanilla Ice Cream!
Any combination of fresh or frozen fruit may be used, but it is best with lots of berries!

I’m glad you were able to overcome your pie crust bad luck and were easily able to make this biscuit-esque topping for the cobbler. It looks STUNNING, and I’m sure it tastes amazing, too!

No Elayna, ours came from King Arthur. I love them, just make enough pie for 1 serving each, then no left overs!

I’m with Robin- I’d end up going crazy eating them. LOL I have no self control except I’d have to sub with peaches or something instead of berries (I hate you allergies!!)

We almost made peach ones this weekend but my peaches we’re quite ripe enough. Now I have to buy more…my kids ate them for lunch 🙂 We’ve used everything from apples to strawberries and they are always delicious! Thanks for stopping by!
