Chocolate Mint Brownies
It’s Time Saving Tuesday and St. Patrick’s Day so I’m sharing a quick and easy way to make a pan of minty, sweet, deliciousness….Chocolate Mint Brownies!
Brownies from a box…the quickest, easiest, best tasting dessert when you’re in a hurry. Go ahead and admit it, you love them. Who doesn’t? And why not? What’s not to love about soft, chocolatey goodness warm out of the oven? Even most of us “bake from scratch” people love a good box of brownies.
If you like mint and chocolate, you’ll love these Chocolate Mint Brownies. They taste like you’re eating a giant Andes Mint! They’re perfect for a family night dinner at home, party or take anywhere dessert.
Here’s the Recipe:

1 box brownie mix and ingredients required – usually oil, water and eggs
Filling:
- 1/2 cup butter – softened
- 2 cups powdered sugar
- 1 tablespoon water
- 1/2 mint extract
- 3 drops green food coloring
Topping:
- 1 package mint chocolate chips – 10 oz
- 1/2 cup plus 1 tablespoon butter, cubed
*Note: The first time I made these brownies I used all the filling and topping. We thought the mint was a little strong so I usually use about 1/2 -3/4 of the recipe and freeze the remaining for later*
Bake brownies according to package directions
Cool completely
In a large mixing bowl, combine filling ingredients and mix until creamy
Spread over cooled brownies
Refrigerate to set
Melt topping ingredients in top of double boiler
Let cool 30 minutes, stirring occasionally
Spread over chilled filling
Chill, cut into square and keep refrigerator until ready to serve
